OBS recording with many various windows simultaneously without affecting desktop sound

I'm using OBS to record some streams from Twitch.tv
I would like to ask that:
1. Can I record 2-3 Twitch streams simultaneously (as in my picture, I have 2 streams streaming at the same time: Byun_SC2 and Notakon_JP but I wanna record both of them)
2. Can I record many 'Sources' simultaneously? (e.g. I wanna record both 'browser' and 'Game capture' at the same time).
3. If I'm recording 'Sources', Can I record the sound of that source but still using my desktop sound for other tasks? i.e. I'm recording a Twitch stream with complete sound while still able to use my speakers for other tasks as watching Youtube, .mp4 videos? Currently I don't know how to do that, so for not being annoyed by the 'sources' sound, I must lower my speakers to the lowest, then I can concentrate on other tasks.

Twitch streams can be downloaded, no need to record.

4k Video Downloader has a free version, I think you can download 30 videos a day with it. YouTube D/L is free/still available & Jaksta works good too & can capture "Live" streams, but there is a license fee for it.

Since I'm newcomer to this impressive OBS, I would like to ask more that:
If I wanna record some video conferencing and online meetings program as: Zoom, Microsoft Teams, Google Meet. How can I record such programs? Which 'sources' should I choose? I'm quite sure that's not "Display capture" since I must use my Display for other tasks while still recording such programs.

Sure I know that we can download Twitch stream somehow but only Vod can be downloaded, but I'm watching several streams that they do not record the past broadcast or VOD. That's why I must record real-time when they streaming

For things that you're not a participant in - just a viewer like everyone else - you almost certainly don't have the rights to. But if you can get them to grant you permission for what you want to do with it, then there's also a chance that they'll give you their original file, which bypasses the recording problem entirely.

For things that you *are* a participant in, like an online meeting or something like that, the way that *I* do it is with a Window Capture in OBS. Point it to the meeting window, and it "just works", at least for me. Doesn't even have to be showing: not-minimized with something on top of it, still works. Sound is separate from that, and can get complicated in a hurry. How experienced are you with mixing audio, like this?:

  3. Is it possible to record the audio of a specific source (like a Twitch stream) while still using my desktop sound for other tasks (e.g., watching YouTube or videos)? Right now, I have to lower my speaker volume to avoid stream audio distraction during recording.
